Punch-down fermenter
The punch-down fermenter is mainly used in the production of red wines that require longer maceration to extract color and tannins. A pneumatic cylinder, attached to the cover, with the help of flaps, sinks the cap into the wine must.
The tank consists of a cylindrical coat, conical top, flat bottom at an angle, legs, mixing system with a pneumatic cylinder and is equipped with a cooling coat, which helps maintain the desired temperature range during the fermentation and maceration process.
Due to its shape, the tank does not require much space for installation and operation, being designed as a normal closed tank it takes advantage of the height of the cellar, not the floor surface.
The tanks are made of AISI 304 material, but can also be made entirely of AISI 316 material. The inside of the tank is shiny (BA/3D quality). Internal welds are mechanically treated and polished to enable simple cleaning of the tank.
