A submersible cap fermenter is used to extract the colour and flavour of red wine from wine lees. A pneumatic cylinder, attached to the cover, with the help of flaps, sinks the cap into the wine must. The fermenter is equipped with a switch box for automatic selection of submersion intervals and an outer cooling coat. Fermenters based on cap submersion and splashing of the lees are also produced. The components of such tanks include a pump and a rotation device for evenly distributed splashing of wine lees.
